If you knew anything about The Nest, than you also know I am extremely passionate about improving health through nutrition as one of the largest health challenges in my life (aside from infertility) has been my struggle with Ulcerative Colitis. There was a time in my life I was doubled over in pain for days because of the inflammation in my body. One of the greatest things I ever did for myself was to eliminate gluten and processed crap from my diet.
In my high school and college years, I pretty much lived off of diet soda and noodles of some shape or form. Needless to say changing my lifestyle from a carb addict to health nut was no small feat. Because of my pasta loving ways, and my overall passion for food (I swear cooking is so therapeutic and self-nourishing) I set out on a journey to find the absolute best nutritionally based and delicious Gluten Free foods I could find.
